The von Arnim family at Haute Cabriere in Franschhoek have always been perfectionists in the nicest way—well, they are German after all.
From the superb wines they make, ranging from one of the country’s most favourite, the classic Pinot Noir / Chardonnay blend, to the magnificent MCCs under the Pierre Jourdan label, their wine s are known all over as delivering the very best the country has to offer.
Perched on the Franschhoek Pass road with superb views of one of the most beautiful of all the valleys we have, the restaurant at Haute Cabriere has been a favourite Franschhoek destination for many years.
The vaulted ceiling of the interior encourages one to bonhomie in the nicest way. The whole idea is of restrained elegance, the kind of atmosphere in which one can feel at home.
Now there are two new chefs there, the duo of well-known chefs Nic van Wyk and Westley Muller, a partnership that will bring its own stamp of creativity to the table. The two of them have worked their magic all over the Western Cape and they now have the opportunity to put all that experience to the best of use at Haute Cabriere under the watchful eye of Cellar Master Takuan von Arnim.
The menu is full of new surprises. Lamb loin is served with an intense tomato basil jus, black rice and Provencal vegetables, smoked ham hock with pork belly, and a fragrant Cape bouillabaisse brings out the best in local sea food.
The famous smoked Franschhoek trout is served with fresh asparagus and herb butter gratin. The lamb cannelloni with labneh and cumin vinaigrette is delicious as is the take on Caprese salad with intense tomato flavours and shredded mozzarella. The pistachio soufflé is worth every minute of the 20minutes it takes to make—superb.
The wines of the estate at cellar door prices make it even more worthwhile.
