Towerbosch flash fry them with a touch of garlic and nestle them on a bed of creamy risotto—perfect! The rolled rare beef salad, with pickled peppers and just enough greens to make it healthy without smothering the deliciousness of it all, goes well with the crunchy bread they make there.
