Ingredients

  • 1 ½ cups of buttermilk
  • 1 egg
  • 1 tsp vanilla essence
  • 2 cups of self-rising flour
  • ¼ tsp bicarbonate of soda
  • 1 tbsp castor sugar
  • 30g melted butter
  • 2 cups fresh blueberries
  • Raspberries and strawberries (to serve)
  • maple syrup or golden syrup for serving

Instructions

  1. Sift flour, sugar and bicarbonate of soda in a bowl. Whisk the buttermilk, vanilla and egg together. Make a well in the centre of the flour mixture and pour the buttermilk, vanilla and egg in the centre.
  2. Heat a nonstick frying pan and brush with melted butter. Pour 60 ml of the mixture for each pancake, scatter a few blueberries on top and cook for three minutes or until bubbles appear. Then flip them over and cook for another two minutes or until they are cooked. Repeat until all the batter is finished.
  3. Serve with some more blueberries, raspberries and a few strawberries and top with a delicious drizzle of syrup
