  • For the hake
  • 6 x 350g hake fillets
  • salt and pepper
  • 30g flour
  • 2 tsp sunflower oil
  • 6 tbsp butter
  • 1kg spinach, wilted
  • 1,8kg vegetables, steamed
  • For the salsa verde
  • 2 large handfuls of fresh herbs – including parsley, coriander, mint and basil
  • 2 cloves garlic
  • 20g capers
  • 4 anchovy fillets
  • 1 tbsp Dijon mustard
  • 3 tbsp red wine vinegar
  • ½ cup olive oil


  1. Season the hake on both sides and dust with the flour. Heat the sunflower oil in a frying pan and place the fillets skin side down in it. Fry the fillets on low heat until golden brown on both sides. Add a small amount of butter to both sides of the fillets before serving them with the spinach, vegetables and salsa verde.
  2. To make the salsa verde, finely chop all the solid ingredients and put in a bowl. Add the mustard and vinegar and slowly stir in the oil. Balance the flavour with freshly ground black pepper and sea salt.
