Baked Butternut, Rice and Chorizo

Ingredients

  • 1 large butternut
  • 250g cooked rice
  • 100g diced chorizo sausage
  • 1 clove garlic, crushed
  • 5g paprika
  • zest of 1 lemon

Instructions

  1. Cut off the bottom part of the butternut, on the widest end, and scoop the pips out. Do not throw this ‘lid’ away.
  2. Mix the rice and the rest of the ingredients together. Stuff inside the butternut and put the ‘lid’ back on.
  3. Cover in tinfoil and bake on low coals for an hour.
  4. Cut in half lengthwise and serve while hot.

Wine suggestion: Hidden Valley Viognier 2013
