Ingredients

  • 450g prawns, cleaned and tails left on
  • 650g kingklip, cut into cubes
  • lime wedges, to serve
  • Marinade
  • juice and zest of 1 lime
  • 2 garlic cloves, crushed
  • 2 red chillies, finely sliced (and deseeded if you prefer things less spicy)
  • 15ml olive oil
  • fresh coriander, finely chopped
  • Dipping Sauce
  • 15ml sweet chilli sauce
  • juice and zest of 1 lime
  • 15ml rice vinegar
  • 15ml light soy sauce

Instructions

  1. Put the prawns and line fish cubes into a large bowl and marinate for 30 minutes. Set aside a little extra marinade for basting during cooking.
  2. Meanwhile, soak 15 short bamboo skewers in warm water for 20 minutes.
  3. In a small bowl, mix the dipping sauce ingredients together.
  4. When ready to braai, thread two prawns and two pieces of kingklip cubes on to the skewers. Sear the skewers until cooked through, basting with the extra marinade for about 5 minutes on each side.
  5. Drizzle with a little dipping sauce. Serve the seafood skewers with the dipping sauce and the fresh lime wedges.
