Ingredients

  • 100g butter
  • olive oil
  • 2 red onions, finely chopped
  • 5 cloves of garlic, crushed
  • 2 tablespoons fresh ginger, finely chopped/ grated
  • 2 red chillies, deseeded and finely chopped
  • 1 tbs cumin seeds
  • 15 curry leaves
  • 1 tbs mustard seeds
  • 1 tbs fresh medium heat curry powder
  • 750g chicken breast fillets, skinned and cubed
  • 1 tin chopped tomatoes
  • 2 tins coconut cream
  • sea salt and black pepper
  • 500g shelled tiger prawns
  • 1 cup double cream plain yoghurt
  • 1 handful fresh coriander leaves
  • Vetkoek
  • 3.5 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp sugar
  • 1 packet yeast
  • 2 cups lukewarm water cooking oil for deep frying

Instructions

  1. In a heavy-based saucepan heat the butter and oil, then add the onions, garlic, ginger, chilli and all spices. Fry until aromatic and soft, add the chicken and brown well. When the chicken has been coated add the tomatoes and coconut cream, salt and pepper. Cook for 30 minutes on a low to medium heat. Five minutes before serving add prawns and allow to steam. Just before serving, stir through the coriander leaves and yoghurt.
  2. For the vetkoek, mix all ingredients except the oil in a large mixing bowl, and knead for 10 minutes. Allow dough to stand for 2 hours. Heat the oil and drop tablespoon-size pieces of dough into the hot oil and fry until golden. Serve the fresh vetkoek with the curry.
