Ingredients

  • 250g butter, at room temperature
  • 150g dark chocolate
  • 44g castor sugar
  • 250ml hot water
  • 80ml coffee liqueur
  • 15ml instant coffee powder
  • 260g cake flour
  • 2.5ml baking powder
  • 25g cocoa powder
  • 2 free-range eggs
  • 1 punnet fresh berries to serve

Instructions

  1. Place the butter, chocolate, sugar, water, liqueur and coffee in a saucepan and stir over a low heat until the butter and chocolate have melted. Transfer the mixture to a mixing bowl and leave to cool for 15 minutes.
  2. Preheat the oven to 150°C.
  3. Sift the flour, baking powder, cocoa powder and fold into your chocolate mixture followed by the eggs that have been whisked. Whisk in the eggs. Pour the cake batter into a 20cm greased and lined spring form cake tin, and bake until a skewer inserted comes out clean, about 1 hour and 30 minutes. Remove the cake from the oven and allow to cook for another 15 minutes in the tin.
  4. Turn the cake out and invert it onto a serving plate. Dust the cake with cocoa powder and serve with fresh berries of choice.
