The soup is made with fresh tomatoes, known for its many beneficial nutrients and antioxidants and its rich source of vitamin A, vitamin C and folic acid, with a dash of green and red pepper, bits of cucumber, a blend of olive oil and just a touch of sherry vinegar.

Ingredients

  • 500g tomatoes
  • 28g green pepper
  • 28g red pepper
  • 133g cucumber
  • 135ml olive oil blend*
  • 14ml sherry vinegar
  • 50g fine salt
  • 2 slices of white bread
  • 138ml of water

Instructions

  1. Add all the ingredients into a blender and blend till smooth
  2. Strain the mixture to ensure a smooth consistency
  3. Garnish options:
  4. Basil leaves and crème fraiche
  5. Coarse black pepper and celery
  6. Parsley and croutons

*Olive oil blend

100ml olive oil and 35ml white balsamic vinegar with two pinches of salt
