Serendipity has been a long time in the making, starting when Lizelle Stolze was just five years old. It was then that she started her remarkable gastronomic journey, travelling around the world with her parents. Central and South America, Asia, Australia and Europe – each played its part in stirring an early passion for food.

Ingredients

  • oil
  • 1 tbsp curry blend whole spices
  • 2 onions, peeled and roughly chopped
  • 1 carrot, peeled and chopped
  • 1 celery stick, chopped
  • 1 clove garlic
  • 1,5kg sweet potatoes, peeled and roughly chopped
  • 1 cube vegetable stock
  • 1 tin coconut milk
  • salt, pepper and sugar to season

Instructions

  1. Heat a small amount of oil in a large pot. Fry the spices for two minutes over medium heat.
  2. Add the onion, carrot and celery and sauté for a few minutes.
  3. Add the garlic, sweet potato and the remaining ingredients, except the seasoning.
  4. Cover with water. Bring to the boil and simmer slowly for 20 minutes or until the sweet potatoes are very soft.
  5. Leave to cool slightly and purée. Taste to adjust the seasoning and serve with yoghurt and mint raita and spicy coconut sprinkle.
