Ingredients

  • 2 cups dried figs, finely chopped
  • 2 tbsp balsamic vinegar
  • 1 cup blanched whole almonds

Instructions

  1. Set aside one cup of the chopped figs. Marinate the remaining cup in the balsamic vinegar overnight.
  2. Roast almonds at 180ºC for 10 minutes (until golden), then chop finely or grind. Process the marinated figs in a blender, turn onto a clean work surface and knead with your hands. Add the remaining figs and the almonds and knead into a soft mass. Roll in cling wrap to form a log about 5cm in diameter and chill overnight. Remove the cling wrap and slice.
  3. Serve with cheeses and crackers. The roll will keep in a fridge for about two months.
