Ingredients

  • 400g firm white fish, bones and skin removed
  • 16 shelled prawn tails
  • 2 spring onions, chopped
  • 10ml fresh dill, chopped
  • 2 potatoes, cooked and mashed
  • salt and pepper
  • flour
  • breadcrumbs
  • 1 egg
  • Chilli, Lime and Coriander Dressing
  • 125ml fresh coriander, chopped
  • 4 tbs fish sauce
  • 3 tbs sugar
  • 3 garlic cloves, crushed
  • 2 chillies chopped, deseeded
  • 4 tbs lime juice

Instructions

  1. Roughly chop the fish and keep the prawn tails whole, add the spring onion, dill and mashed potato, and salt and pepper to taste. Shape into 8 balls, dip into seasoned flour, then beaten egg and finally breadcrumbs, repeat until all 8 balls are covered in breadcrumbs.
  2. Deep-fry until golden. To make the dressing mix all the ingredients together and drizzle over  the dressing or serve separately. Serve two croquettes per portion.
