Ingredients

  • 2 tbsp coconut or olive oil
  • 1 large onion, chopped
  • 2 garlic cloves, crushed
  • thumb size (3cm) fresh ginger, grated
  • 2 celery stalks, chopped
  • 1 tsp ground cinnamon
  • 2 tsp ground turmeric
  • herb salt and ground black pepper to taste
  • 750g carrots, peeled and chopped
  • 1 litre vegetable stock (can use bone broth)
  • Garnish
  • coriander leaves and chilli flakes

Instructions

  1. Heat oil in a saucepan and sauté onion, garlic, ginger, celery and spices together.
  2. Add carrots and stock and allow to simmer until carrots are tender.
  3. Liquidise, season to taste and spoon into soup bowls.
  4. Serve hot garnished with coriander leaves and chilli flakes.
