Ingredients

  • 1 tbsp oil
  • 1 leg of lamb, diced in a Magimix for better texture
  • 1 large onion, diced
  • 1 level tbsp Karoo herb salt (recipe on page 92)
  • garlic butter
  • ciabatta or bread of choice
  • Tzatziki
  • Bulgarian yoghurt
  • sprigs of mint and coriander
  • cucumber, peeled and shredded

Instructions

  1. Sweat onion in oil.
  2. Mix all ingredients together.
  3. Shape the burgers, using about 180g per pattie. Allow to cool in the fridge for about an hour before grilling. Grill 4-5 minutes each side turning once only.
  4. Toast a slice of ciabatta. Brush with garlic butter. Spread with onion marmalade and place burger on the ciabatta. Top with a good spoonful of tzatziki, garnish and serve. A bamboo skewer can be used to hold the burger together.
  5. To make the tzatziki, chop the mint and coriander, mix with the cucumber in a bowl of Bulgarian yoghurt and season to taste.
