Ingredients

  • 4 medium-sized red onions
  • 30ml olive oil
  • Salt and freshly ground
  • black pepper
  • 50g rocket
  • Coriander leaves, chopped
  • 120g crumbled feta
  • 100g flaked almonds, lightly toasted in a pan
  • Salsa
  • 1 red chilli, deseeded and sliced
  • 1 garlic clove, crushed
  • 60ml red wine vinegar
  • 30ml olive oil

Instructions

  1. Preheat your oven to 180°C.
  2. Peel the onions, remove the tops and tails, and slice them into halves. Place on a baking tray, brush with olive oil and season with salt and pepper. Roast in the oven for 40 minutes, until the onions are cooked and golden brown. Grill them if not browned enough.
  3. Mix all the salsa ingredients in a small bowl, stir, season with salt and pepper and set aside.
  4. To serve, put the rocket and chopped coriander into a large mixing bowl. Add the feta and almonds. Add the onions and drizzle the salsa over the onions.
