- 1 medium bunch of mint leaves
- 105g castor sugar
- 125ml fresh lime juice
- 375ml tequila
- ice cubes, to serve
- soda water, to serve
- mint and lime, to garnish
- Muddle the mint leaves with the castor sugar and fresh lime juice in a large shaker. Strain into a small jug and stir in the tequila.
- Fill six tall glasses with ice and pour the cocktail over the ice cubes. Top with soda water, garnish with mint and lime, and serve.
