Rosemary Crusted Rare Roast Fillet

Ingredients

  • rosemary leaves
  • fresh garlic, crushed
  • Dijon mustard
  • fillet of beef

Instructions

  1. Crush the rosemary leaves using a pestle and mortar or herb grinder. Mix well together with the garlic and mustard to make a paste.
  2. Spread the paste over the whole fillet. Wrap the fillet in cling wrap and put it in your fridge overnight. The next day, unwrap the fillet and sear it all over in hot oil. Place it immediately in a very hot oven for 15 minutes (less if you prefer your meat rare or more if you prefer it more thoroughly cooked).
  3. Rest the meat before carving it into either thin slices for a cold platter with salad, or thicker slices for serving with hot vegetables and gravy in traditional roast fashion.
