  • 2 – 3kg pork loin (shoulder, boned or rolled loin)
  • freshly ground black pepper
  • oil
  • salt
  • Spicy Sauce
  • 20ml tomato sauce
  • 200ml tomato puree
  • 45ml brown sugar
  • 15ml prepared mild mustard
  • 45ml white vinegar
  • 2,5ml dried mixed herbs
  • 15ml soy sauce
  • 30ml HP sauce
  • 2ml Tabasco sauce


  1. Preheat oven to 160°C.
  2. Wipe meat with oil and score rind if necessary. Season meat lightly with salt and pepper. Sprinkle extra salt over rind. Weigh meat and calculate cooking time, allowing 25 to 30 minutes per 500g, plus 25 minutes.
  3. Place meat, fat side uppermost, on rack of roasting pan. Roast pork for calculated time.
  4. For crisp crackling, do not baste rind with pan juices or it will turn soggy. 30 minutes before the end of the cooking time, increase the oven temperature to 200°C and roast pork until crackling is crisp and golden.
  5. Combine all the sauce ingredients, bring to the boil and simmer for 10 minutes. Serve hot or cold with pork roast.
