Ingredients

  • slice of ciabatta or bread of choice
  • 1 tsp sun-dried tomato pesto
  • selection of roasted/grilled vegetables i.e. thin slices butternut, courgettes, aubergine, onion, tomato, etc.
  • basil pesto thinned with good olive oil
  • balsamic reduction
  • feta cheese
  • olives
  • sundried tomatoes

Instructions

  1. Toast ciabatta on one side. Spread with tomato pesto. Arrange vegetables on ciabatta and top with olives, sundried tomatoes and feta. Place under grill for 1 minute. Drizzle with balsamic reduction and basil pesto oil.
  2. Serve.

Notes

Cook’s tip: We often change this dish to a roasted vegetable salad by omitting the bread and serving the warm vegetables on a mixture of baby salad leaves.
