Ingredients

  • 4 x 120g trout fillets
  • lemon wedges to serve
  • Spinach Basil Pesto
  • 3 cups spinach, shredded
  • 1 cup fresh basil leaves
  • 1 tbsp fresh lemon juice
  • 4 tbsp olive oil
  • 2 tbsp whole almonds, toasted
  • 2 garlic cloves, crushed
  • herb salt and ground black pepper to taste
  • 2 tbsp Parmesan cheese, grated

Instructions

    1. Blitz all ingredients, except the Parmesan, together in a food processor until the pesto is smooth.
    2. Stir in the Parmesan and season to taste.
    3. Preheat the oven to 180°C.
    4. Place the the fillets of trout onto a lightly greased baking tray.
    5. Spoon 2 tbsp of the pesto down the centre of each fillet.
    6. Bake the trout for 8-10 minutes.
    7. Serve with lemon wedges.

Notes

The spinach basil pesto makes about 2 cups. After use, spoon the remaining pesto into a glass jar, seal with a layer of olive oil and refrigerate. Keeps up to two weeks.
