This book wouldn’t be complete without a braai pie recipe! So I’ve come up with something really creative and special for you. This braai pie is loaded with a delicious nutty filling and a syrup poured over for that extra sweet stickiness. This is similar to Greek baklava and the braai really brings out the roasty nutty flavours. It is very easy to make and perfect served with vanilla ice cream.

  • 6 tbsp honey
  • 200 g unsalted nuts (I use almonds)
  • 1 tsp ground cloves
  • 1 tbsp cinnamon
  • 3 tbsp melted butter
  • 1 roll of ready rolled puff pastry
  • 1 free-range egg, beaten
  • 250 g sugar
  • 100 ml water
  • juice of 1 lemon
  • 1 tbsp lemon zest
  • vanilla ice cream, to serve


  1. In a food processor combine the honey, nuts, cloves, cinnamon and butter, and blend until you reach a crumbly consistency that still has a nice crunch.
  2. Spread the nut mixture onto half the puff pastry sheet and fold the other side over the mixture. Seal the edges with a fork.
  3. Grease your braai grill thingy very well! I use cooking spray.
  4. Put the braai pie onto your braai grill and brush with the beaten egg.
  5. Close the grill to flip over your pie and brush the other side.
  6. Braai your pie on a low-medium heat until each side is cooked through. You will need to turn the braai pie often so that it browns evenly.
  7. Make the syrup by heating the brown sugar and water in a small saucepan on a low heat until the sugar is dissolved.
  8. Add the lemon juice and lemon zest.
  9. When the braai pie is ready, place it on a plate and cut into squares or triangles.
  10. Pour over the warm syrup so that the braai pie soaks up all the delicious sticky sauce.
  11. Serve with vanilla ice cream. Yum!

Tips and tricks

If you don’t have a food processor, crush the nuts by putting them into a strong ziplokkie and bash them with a rolling pin. I recommended using almonds, pistachios, walnuts, pecans or even a mixed bag.

You can pop some cloves into the pastry before putting it on the braai for a stunning visual effect and a delicious flavour.
