On 24 September we celebrate National Heritage Day in South Africa. It is a day where we can get together and celebrate our rich heritage by uniting around fires and enjoying some delicious food.
To many South Africans this means spending time around the braai, but as man can’t live on meat alone, one does need a side dish or two.
That’s why Pouyoukas Foods is sharing its recipe for this amazing mixed bean salad. It contains its 5 bean mix and chickpeas. These are filling and nutritious and go down very well with a braai. The bean salad lasts long and can be enjoyed the whole week, if there is any leftover.
Pouyoukas mixed bean salad
1 cup Pouyoukas 5 bean mix, prepared as per pack instructions
2 tablespoons coriander
1 cup Pouyoukas chickpeas, prepared as per pack instructions
1 red pepper, chopped
½ cup feta cheese, crumbled
¼ cup red wine vinegar
2 tablespoons lemon juice
½ red onion, finely chopped
1 clove garlic, finely minced
½ teaspoon dried oregano
2 tablespoons sugar
Salt and freshly ground black pepper, to taste
Stir together all ingredients for dressing and set aside.
In a large bowl, add the beans, chickpeas and red pepper and stir to combine.
Pour dressing over the salad ingredients and stir gently to coat.
Cover and allow the salad to marinate at least 1 hour.
Remove from the fridge, add feta cheese and chopped coriander and stir to combine.
Season to taste with salt and pepper and enjoy!
