With the temperature outside slowly creeping towards single digit figures, the time for soup is nearly upon us.
In the meantime, you might want to try some cold tomato soup, which is perfect for this in-betweener weather we’re currently experiencing.
MAReSOL Restaurant at the V&A Waterfront has the perfect cold tomato soup that is just the right balance between autumn and winter; and it’s a healthy option too.
The soup is made with fresh tomatoes, known for its many beneficial nutrients and antioxidants and its rich source of vitamin A, vitamin C and folic acid, with a dash of green and red pepper, bits of cucumber, a blend of olive oil and just a touch of sherry vinegar.
28g green pepper
28g red pepper
135ml olive oil blend*
14ml sherry vinegar
50g fine salt
2 slices of white bread
138ml of water
Add all the ingredients into a blender and blend till smooth
Strain the mixture to ensure a smooth consistency
Basil leaves and crème fraiche
Coarse black pepper and celery
Parsley and croutons

100ml olive oil and 35ml white balsamic vinegar with two pinches of salt
