Watermelon, Feta and Mint Salad

  • lettuce leaves
  • ¼ watermelon, peeled and cubed
  • 100g feta cheese, cubed
  • ¼ cup pine nuts
  • small bunch mint leaves, removed from stalks and chopped
  • 1½ tbsp lemon juice
  • 1½ tbsp olive oil


  1. Arrange the lettuce on a plate. Add the watermelon, feta and mint.
  2. Garnish with the pine nuts (raw or dry-roasted in a frying pan) and sprinkle with the lemon juice and olive oil.
