- lettuce leaves
- ¼ watermelon, peeled and cubed
- 100g feta cheese, cubed
- ¼ cup pine nuts
- small bunch mint leaves, removed from stalks and chopped
- 1½ tbsp lemon juice
- 1½ tbsp olive oil
- Arrange the lettuce on a plate. Add the watermelon, feta and mint.
- Garnish with the pine nuts (raw or dry-roasted in a frying pan) and sprinkle with the lemon juice and olive oil.
